The Bimber Westminster (part of the Spirit of the Underground series) is a highly limited single malt whisky matured entirely in a single ex-Madeira cask.
Bottled at a natural cask strength of 57.2% ABV without chill filtration or artificial colouring, this edition yielded just 242 bottles.

Nose: Bright and vibrant, leading with tropical fruit highlights like passion fruit and sweet pineapple. This is followed by underlying notes of beeswax, hints of butterscotch, and a light, earthy minerality.
Palate: Unmistakably rich and oily in the mouth, characteristic of Bimber’s distillate. You'll detect flavours of dark chocolate and kilned grains that build into sweeter notes of caramel and Demerara sugar. Strong oak spices and a subtle kick of aniseed add complexity.
Finish: Medium length with warming baking spices that linger on the tongue, accompanied by hints of orange blossom and grape must.
